i really love seeing other folks 'from garden to table' posts. It is always nice to see how folks can incorporate garden produce into different meals. It also give me some new ideas and recipes to try. After picking our daily harvest, i wanted to see how much i could incorporate into a meal.
We are just starting to really get squash, every morning i am finding 2 or 3, and usually sometime in the afternoon i find another i had missed. We are still getting lots of blueberries, and i picked these blackberries right at the edge of the yard. We are going tonight to pick bucket fulls at our favorite blackberry spot.
We are also just starting to get yellow wax beans, and i picked my first cucumber of the season. i dug these new potatoes specifically for our meal, leaving the rest in the ground to harden off a bit.
i decided on pan fried potatoes and veggies. i chopped the potatoes and then coated them in a little seasoned flour. Then fried them in EVOO. When they were beginging to brown i added, onion (from the garden) and red and green pepper (frozen from last years garden). i let it cook a bit and then added chopped zucchini and yellow squash. We let it cook until the potaotes are nicely browned and the veggies are tender crisp.
Whole wheat blueberry pancakes are always a favorite. Of course we didn't 'grow' all of these ingredients, but we did grow the blueberries and the eggs came from our hens. Blueberry syrup is a new favorite. It takes less sugar than tradition homemade syrups and is extra yummy.
the recipe we used was
2 cup fresh blueberries (crushed)
1 cup sugar
1/2 cup water
1 tbsp lemon juice
Cook blueberries with sugar and water until thick.
Our syrup wasn't super thick, but it was delicious. You could easily add a little cornstarch if you prefer it thicker.
So my picture isn't the prettiest, but it was delicious. It's also really nice to look back at this meal and know how much we produced ourselves.

ReplyDeleteMy favorite garden to dish meal was today's lunch. I had a salad of spring mix, spinach, roasted beets, peas and radish along with a bowl of last years tomato basil soup and a slice of my buttermilk rye chard bread!
So, if you will excuse me, I think it is time for a food coma! ;)

ReplyDeleteI love the pancakes with the blackberry sauce! My mom used to make it for us when we are still little. Now, I regularly make pancakes for my daughters. Thanks for sharing one quick recipe for this one. I will definitely try it once I get home.
